WHOLE BUNCH PRESSED AND JUICE IS ALLOWED TO SETTLE IN TANK OVERNIGHT. RACKED OF HEAVY SEDIMENT TO S/S TANK. FERMENTATION ALLOWED TO TAKE PLACE NATURALLY AND FERMENTED AT A LOW TEMPERATURE. SEVERAL RACKINGS TAKE PLACE DURING THE FERMENTATION TO CLARIFY THE WINE BEFORE BEING BOTTLED. THE FERMENTING JUICE IS BOTTLED AT A CERTAIN RESIDUAL SUGAR AND THE WINE COMPLETES ITS FERMENT IN BOTTLE, TO GIVE THE WINE ITS BUBBLES.
