After the initial pressing, the fermentation is allowed to occur naturally and continues in concrete and stainless steel tanks. Once the primary fermentation is complete the components are blended together and further matured in neutral vessels.
Tasting Notes
On the nose, the Hanepoot is evident as it lends notes of elderflower and tropical fruit. Bright acidity on the palate really imparts a quenching quality to the wine. The Semillon provides balance and a nice rounded texture on the finish.
