Parcels picked by hand at varying ripeness for complexity and balanced acidity, fruit and minerality. Each gives something for the range of options with the blend. Cool fermentation in stainless steel tanks with natural yeast. Juice kept on lees for 4 months, occasional battonnage to enhance palate weight and texture. Blended prior to bottling, still on the lees, allows total integration before bottling. Minimal fining prior to filtration was maintained throughout.
Tasting Notes
A wonderfully lively, intense, fruity and beautifully balanced dry Chenin Blanc. Aromas of green apples and white peach invite the juicy and taut palate. It shows persistence of flavor and freshness on the palate. Very individual, the character of this wine makes it a perfect companion to warm summer days and long balmy evenings.
