Tony and Ivan are the founders of the craft distillery while Chris, a young chemical engineer and distiller, manages most of the distillery’s production. The small company is based in Victoria Yards, an urban regeneration project where arts and crafts in brick warehouses are surrounded by lush green belts of edible plants.
Primal is one of the very few distilleries who makes their own neutral spirit from scratch. Their sustainably grown hard red wheat is milled, mashed and fermented by themselves. It is then triple distilled in their column still to create the vodka base spirit of their gins.
Essentially, gin is a flavored vodka with juniper, and a range of other botanicals. The choice is vast. Just like in cooking. They wanted to create gins with distinctive flavor profiles, that have a very local identity which makes them stand out in a busy market. The highest quality of ingredients, subtle balance of flavors, lots of testing, patience and determination are in every bottle they produce. They also source heritage, indigenous plants and fruits like the Rex Union orange. Many of their herbs are grown right on the property.
